Garden Rhubarb


Scientific Name: Rheum x hybridum

Plant Characteristics: Rhubarb has reddish leaf stalks, called petioles. These petioles are edible, although the leaf blades are very poisonous. Rhubarb grows a white flower that blooms from May to August.

Plant Uses:

Culinary: Rhubarb was used for baking. It was processed into pies, tarts, and jellies. It was also used in stews.

Medicinal: Rhubarb was used as a laxative, a purgative, and an astringent.

Fun Fact: Rhubarb is a green vegetable that is used like a fruit in cooking. The quick-growing edible stem ripens before most other fruits, and tastes like a fruit when cooked with sugar.
